Nicci's Elephant Carrot Cake

I made this cake very quickly for my mother in law's birthday. It is nothing fancy, but it was a very yummy carrot cake with cream cheese frosting and fondant elephants that I cut out the night before and then draped over the side of a drinking glass over night to dry. The cake was a hit at our family party, and at only 6 inches the cake was the perfect size!
